Add Gin, syrup, juice, and bitters to a cocktail shaker with ice. Shake and double strain to a highball glass. Top with soda water. Garnish with rosemary.
For the rosemary simple syrup, dissolve sugar in water 1:1 in a sauce pan over medium heat. Add 3-4 sprigs of fresh rosemary and let cool. Strain before using.
