Add gin, syrup, and juice to a cocktail shaker with ice. Shake until cold and strain over fresh ice to your favorite glass. Top with elderflower tonic. Garnish with candied kumquat.
*For the Kumquat honey syrup, dissolve honey with water 1:1 in a heated saucepan. Soak kumquat slices in honey syrup for 1-2 hours. Allow to cool before use.
